Flaxseeds anyone?

September 9, 2008 - By Jen

Today at lunch Kayla was picking the flaxseeds off the crust of her bread when she said, “mmm, Mommy, these are so good.  What are these?”  I explained that they are flaxseeds, that they’re super healthy and that they can even help your skin not to itch so much.  Motivated by my speech, Kayla was eager to try some plain, so I poured some on her plate from a container in the fridge.  Madeline wanted the same.  I lost count of how many times the girls said, “may I have more flaxseeds please?”

Good job Jenni. I try to sneak them into baked goods. Sometimes I roast them in the oven for a few mins. to give them a nuttier taste.

I’ll have to try ’em. A few weeks ago, we were making a dish that used a lot of broccoli, and for the fun of it, I sliced the thick stalks into thin wafers and asked the kids if they’d like some “broccoli chips.” Well, they sure did! I even took the opportunity to get Aiden, on video, saying, “I want more broccoli!” …I figure it should be good for blackmail later. 🙂
