Last night we tried a new dessert recipe that turned out quite delicious! We rarely make dessert at our house–we’re much more likely to get Coldstone when we’re having a sweet craving. This week, however, I decided to make a dessert for one main reason. I have a Pampered Chef bread tube that has been sitting on my shelf for years. Aaron has tried to get rid of it, but I’ve persuaded him that I really will use it one of these days. Knowing we’re about to take on a major organization/clutter elimination project, I knew I better use it or it would go in the “redistribute to the masses” pile. (I think we’re going to try the “if you haven’t used it in a year, toss it” approach.)
For the cookie sandwiches, you use the bread tube as a cookie cutter to cut cookies out of chocolate chip cookie dough. You bake the cookies and then fill the bread tube with softened ice cream. Next you refreeze the ice cream for 4 – 6 hours. Then you slice the ice cream, put it between the cookies and eat the sandwiches. Very yummy!
